Thick vanilla custard sandwiched between flaky pastry and topped with sweet icing — a bakery case classic.
Method
- Line a 20 cm square tin with one sheet of baked pastry.
- Whisk milk, sugar and custard powder in a saucepan over medium heat until thick.
- Remove from heat and stir in butter and vanilla until smooth.
- Pour custard over the pastry base and top with the second pastry sheet. Chill 2 hours.
- Mix icing sugar with extra milk to make a spreadable icing. Pour over the slice and set.
- Cut into squares with a hot, clean knife.
